Princeton Review and U.S. News & World Report regard Davidson's admission process as "most selective".[15]

For the class of 2023 (enrolled fall 2019), Davidson received 5,973 applications and accepted 1,091 (18.3%).[16] The yield rate (the percentage of accepted students who enroll) was 48.4%.[16] The middle 50% range of SAT scores for enrolled students was 650–720 for Evidence-Based Reading & Writing, and 660–750 for Math, while the ACT Composite range was 30–33.[16] Enrolled freshmen represent 41 states and 18 countries; 43.1% were from the U.S. South.[16]

I'm not sure why you're singling out Davidson as a school that would "covet" these student athletes.  Davidson is "highly selective" and is listed by Forbes as the #48 college in America, with numerous Rhodes Scholars among their graduates.

For one, it was a joke about the value of these kinds of obscure talents (and their relevance to football recruiting).

But also, I chose 2 schools with strong academic reputations in the Pioneer League that would value a multi-lingual student or a Rubik's Cube and archery master (also as evidence of STEM proficiency).

I think it is clear that UST is ready to compete with most of the Pioneer League in the Academic Bowl. Going to have to bring that to the PFL discussion board.

I'm not a great recruiting mind by any measure, and don't really follow MN High School football. The one dude that I've heard about from that list is the Kowalkowski QB kid from Totino. There has been a decent amount of discussion about him on the Gopher forum GopherHole (maybe driven by his dad? I guess y'all are sad he won't find a home with us here) and he had some G5 offers along with being the #1 rated MN QB by sites that do that sort of thing.

Once GAC completes their upgrades one could argue that the Tommie$ will lag behind the U of M, MN-State Mankato, SJU, and GAC when it comes to year round training facilities.
