It would be interesting to do a little research on how schools came up with their mascots. Some of them are very "interesting" to say the least.

There is a great book on this topic about high schools in Illinois called "Why mascots have tales"

Also, every year I do a Mascot Bracket for the NCAA tournament, picking the winners based solely on which mascot would win in a fight.  I've done some interesting research into nicknames like the Blue Devils and Hawkeyes in the past.  Here's last year's link:

Elmhurst's original athletics Mascot/team name was Pirates.  I want to say they changed the nickname to present day Bluejays ~50's?  We highlighted that on one of our broadcasts during down time.
